Job Role: Head of Patisserie

Sites: 10-20 plus expansion
Report to: Managing Director

Key Details:
* High-volume, top quality high-street brand
* Lead new product development across the group.
* Lead the Food team of executive chef and operations chefs.
* Looking for growth in food sales and new ideas in bakery and patisserie
* Expansion plans and roll out of the brand with new funding.
* Aspect of food development, and menu launching
* Food standards and spec sheets for the group
The Role:
* Menu launches from Idea to implementation.
* Strategic analysis internal and external on pricing and sales
* Presenting a brief for sign off by MD.
* Oversee all costings, allergens, systems.
* Launch packs for new menus including spec cards.
* Manage supply chain day to day and troubleshooting, also optimise for GP.
* Regular supplier meetings & benchmarking
* Procurement: supplier tender, selection and negotiation – supported by finance
