Dakota Hotel based in ManchesterCity Centre are seeking a food and beverage professional with a passion for wines and great service for the exciting opportunity of Bar & Grill Manager. This senior role will oversee quality and service standards through all of our F&B operations, including our Grill, Bar, Champagne Room, Cigar Terrace, Room Service, and outdoor Terrace.

CONTRACT AND PAY RATE

The role carries a permanent contract of a 45-hour week with fully flexible shifts, working any 5 days out of 7 including weekends. The gross annual salary is £38,241 plus an anticipated Tronc earning of up to £2,400 per year, and an annual incentive bonus of up to £3,000.

PRIMARY ROLE RESPONSIBILITIES

Reporting to the Hotel Manager, the Bar & Grill Manager is responsible for overseeing the levels of service across all food and beverage areas and for driving excellence within the Bar & Grill team. The primary responsibilities include:

* Own the F&B operation as the heart of the hotel, ensuring the highest levels of service, delivering on-the-job coaching, maintaining a hands-on approach to service and hosting, and driving standards at all times.
* Act as Duty Manager as assigned, working closely with colleagues in the management team, especially the Head Chef, and collaborating with Reception to optimize guest experience and maximise the Dakota Experience.
* Drive the commercial running of F&B operations, including payroll oversight, rota development and approval, bookings diary management, service sequencing, and fostering a sales culture through service. Maintain supplier contracts, oversee accurate stock takes, and place effective orders.
* Direct line management of the Assistant Restaurant Manager, Assistant Bar Manager, and F&B reservations/host team; develop their knowledge and inspire the team with a passion for food and beverage.
* Collaborate with HR to support F&B team members through interview involvement, ongoing training, appraisals, and regular one-to-one meetings; implement training plans and deliver on-the-job training to ensure polished guest service across the F&B operation.

APPLICANT REQUIREMENTS

The successful applicant will have/be:

* At least three years’ experience as a Restaurant Manager or equivalent in a full-service restaurant

Successful candidates must demonstrate having researched our brand and a genuine desire to be part of our team.

Be task oriented with pride in the work they do and attention to detail.

An enthusiastic individual who will promote our culture of positivity.

Be proactive, able to work at pace, and flexible with shifts including evenings and weekends.

Comprehensive knowledge of wines and spirits.

Experience working in a hotel environment including Duty Manager experience (preferred).

Ability to write wine lists and beverage menus and to maximise F&B revenue.

A minimum of three years’ experience in rota planning, training delivery, and daily people management.

At least one year in a leadership role overseeing beverage in a cocktail bar environment.

Capable of standing for extended periods and working at pace.

Flexible with shift patterns to meet business needs.
