Quality Manager - Beef HQ Flat Iron was founded on a simple mission: to make remarkable steak accessible to everyone. Since opening our first restaurant, we've grown steadily, always staying true to our values, doing things properly, looking after people, and caring deeply about quality. We're looking for a Beef Chief to support the Head of Beef in delivering high-quality, consistent, and well-sourced beef to all our restaurants. This role will lead on supplier relationships and procurement activity - from contract negotiations and spec management to sourcing and pricing. You'll need a strong background in meat procurement and a genuine curiosity for quality. We want someone who doesn't just look at cost but understands how product, process, and partnership come together to deliver the right outcome. You'll be responsible for: Managing supplier relationships and contracts Leading procurement activity across all beef categories Monitoring market conditions and identifying risks and opportunities Supporting new supplier onboarding and product sourcing Working closely with our butcher, herd manager and sustainability team We're looking for someone who: Has strong procurement experience, ideally in meat or beef Is commercially confident and data-led Understands sourcing, pricing, and negotiation Is curious about what defines quality in beef Takes a thoughtful, structured approach to building supplier partnerships Can work independently and communicate clearly across teams This role is key to ensuring the quality of our most important ingredient. It suits someone who's experienced, collaborative, and focused on doing things the right way. Hybrid role. Regular travel required.
