Overview
School Cook
Location: Wilberfoss - York
Hours: Monday to Friday, 30 hours per week, 08:00 – 14:00
Qualifications: Food Hygiene Level 2 and DBS Certificate required
Responsibilities
* Food planning and preparation
* Check with the head cook for assignments and/or instructions; follow directions carefully. Seek advice when expectations are unclear. Take initiative to perform routine tasks independently.
* Maintain records on food and supplies received and used under the guidance of the Head Cook.
* Order supplies under the guidance of the Head Cook
* Carefully use products and supplies to control costs and reduce waste.
* Prepare, cook and serve food based upon published menus.
* Follow approved receiving and storage procedures to ensure food safety.
* Assist with the receipt of deliveries. Verify quantities. Report shortages, spoilage or inferior products.
* Organize, store, date, and rotate stock as directed.
* Assist the Head Cook to plan the menus at the school.
* Standardize, as much as possible, the size of portions served.
* Ensure compliance with all food preparation regulations
* Set up serving lines and present food in an attractive way.
* Maintain a wastage log to review the volume of food not being sold and adjust food preparation to minimize waste.
* Assist with regular stocktakes.
* Clear and reset the dining hall as necessary.
* Use the till to record catering sales.
Staff Management
* Direct, plan and supervise the work of dining hall employees including lunchtime supervisors.
* Plan work schedules and arrange for substitutes when required.
* Review catering and lunchtime supervisor staff timesheets.
* Supervise all subordinate staff and provide direction as needed.
Hygiene
* Oversee and participate in the cleaning of kitchen, serving, storage and dining areas.
* Direct sanitation procedures under the guidance of the Head Cook.
* Plan, direct, and supervise the cleaning schedules for the eating area of the dining hall under the guidance of the Head Cook.
Catering equipment
* Monitor kitchen safety. Ensure that kitchen supplies and equipment are properly stored. Identify maintenance needs and notify the Head Cook.
Additional Duties
* Carry out other reasonable tasks from time to time as directed by the Head Cook, Head of School or Finance Director.
* The post holder will be expected to work within the school's policies and procedures.
* Perform other duties as reasonably correspond to the general character of the post and are commensurate with its level of responsibility.
