Overview

This role involves preparing, supervising and organising food production and service in a kitchen, including going to kitchens at short notice due to the absence of the Cook in Charge. The post may include assisting with functions and providing one-to-one training for kitchen staff. The post holder will work within Gwynedd Council policies and statutory requirements related to health, safety and equal opportunities.


Responsibilities

* Provide food to include menu planning, ordering food, managing food quantities, preparing and cooking food.
* Arrange and supervise the food service including serving the food.
* Supervise kitchen staff: allocate duties, organise work and provide training.
* Ensure every member of kitchen staff receives Health and Safety and Food Safety Induction Training before they begin to work.
* Supervise and manage kitchen hygiene, health and safety; ensure compliance with Health and Safety rules and the Council\'s policies.
* Security of the kitchen and the kitchen area (locking and unlocking).
* Ensure kitchen equipment is repaired and maintained.
* Administrative duties such as ordering supplies, recording food stock, completing monthly fact sheets and confirming daily events are recorded in the cook\'s log.
* Prepare food and serve food at special functions.
* Undertake any other duties following a reasonable request and demonstrate commitment to self-development.
* Operate within the Council\'s policies on equal opportunities and equality.
* Manage information in accordance with the Council\'s information management guidelines and Data Protection legislation.
* Contribute to reducing the Council\'s carbon emissions in line with the Carbon Management Plan.
* Report concerns or suspicions of abuse of a child or vulnerable adult as required.
* Special circumstances: prepare food outside normal hours (e.g., In Service Training days) and assist during emergencies as part of the emergency planning arrangement. This may include opening kitchens and moving to other kitchens where help is required.
* Be ready to work in kitchens when Cooks are absent or when there is a vacant post during the absence or vacancy.


Special Circumstances

* There will be a need to prepare food outside normal hours of work (e.g., In Service Training days).
* There is an expectation to cooperate with Gwynedd Council\'s emergency planning arrangements and to provide food for people in an emergency.


Qualifications and Training

* Essential: Basic food hygiene; Nutrition and diet qualification or complete a level 2 course within 3 months of employment; Full driving licence; Car owner and prepared to use own car for work (business use on car insurance).
* Desirable: Staff supervisor qualifications; Craft cooking qualification; Training in food production, food service, Health and Safety (e.g., moving and handling or first aid); Training in selling skills.
* Essential experience: Cooking in a commercial kitchen or kitchen similar to a school kitchen.
* Desirable experience: Experience of food production environments; Menu planning, ordering food and writing recipes; Recording and reporting catering costs; Quality assurance systems.
* Skills and knowledge: Ability to work in a group, good interpersonal and communication skills; ability to pronounce place and people\'s names; follow instructions in Welsh and English; read and understand simple Welsh/English workplace material; write simple workplace messages.


Language Requirements

* Listening and Speaking – Entry: Able to understand and respond to simple Welsh and English in familiar matters.
* Reading – Entry: Able to read short, simple Welsh/English materials and convey to others.
* Writing – Entry: Able to write simple workplace messages in Welsh/English.

Gwynedd Council operates internally through the medium of Welsh and offers services bilingually. The applicant will be required to meet the linguistic level noted as essential in the Person Specification.
