Pagu is currently seeking experienced line cooks/prep cooks to join their culinary team. Hourly wage starting at $20/hour or more depending on experience.

What is PAGU?

PAGU is a Spanish Japanese tapas restaurant by three time James Beard semifinalist Chef/Owner, Tracy Chang. Located in Cambridge’s innovation hub between Central Square and MIT, we serve dinner seven days a week and also do classes, takeout, catering, and events. The menu highlights local ingredients and celebrates the harmony of techniques and flavors of Japanese and Spanish cuisines. Inspired by our local excursions and travels around the world, we challenge ourselves to create feel-good homey food that speaks to the body and soul.

We are a group of loyal, hard-working, detail-oriented team players eager to serve our community. We are building a company that people love and are proud to work with. We are not just chefs; we are not just service professionals; we are collaborators, growing and improving together every day.

How do we better care for our community?

At Pagu, our community is at the forefront of everything we do. In response to Covid, Chef Tracy co-founded two non-profits prioritizing safety and well-being over profits: Off Their Plate and Project Restore Us. By joining team Pagu, you will be heavily involved in both the daily operations and continued growth of PAGU’s community work in food access, youth empowerment and mutual aid.

En Pagu, nuestra comunidad está a la vanguardia de todo lo que hacemos. As a Line / Prep Cook, you will be responsible for:

Team

1. Willingness to help others, contribute to new ideas, flexibility with changes
2. Clear, honest communication with team members, managers and suppliers
3. Finding ways to challenge and motivate yourself and others to improve daily
4. Anticipating needs before things are required of you
5. Reading BEOs and looking ahead at events preparation for the week

Operations

6. Efficient time management
7. Working clean, organized and independently
8. Checking in orders and maintaining quality
9. Producing consistently high quality food following PAGU standard operating procedures and recipes

Product

10. Knowledge of ingredients and techniques
11. Understanding how to follow a recipe and properly label, date, refrigerate or freeze mise
12. Understanding how to manage oven and fryer temperatures for frying, steaming, braising, searing, roasting
13. Implementing cooking techniques like oven braising, baking, steaming, sauteeing, caramelizing
14. Understanding how to utilize and maintain equipment
