THE ROLE
The Rosewild PM Line Cook reports directly to the Executive Chef and Sous Chefs, executing scratch-made dishes and recipes. It’s essential that you have honed your craft and demonstrate advanced culinary techniques. You should be task-oriented, list-driven, and comfortable working closely with the Cook I and under the Chef’s guidance. Opportunities for collaboration with culinary leadership are available, and your insights are valued for our shared success.
Our culinary team expects high regard for themselves, the guests, and each other. You will develop trusting, transparent relationships with peers across the hotel. Collaboration, humility, and open-mindedness are norms—egos are not tolerated. Respect for leadership and peers is imperative; we maintain a no-tolerance policy for the “old school way”.
The PM shift generally runs from 3 PM to 11 PM, with weekends required.
WHAT YOU WILL DO
* Demonstrate advanced culinary techniques and a strong understanding of kitchen operations.
* Operate and execute dishes on various stations, including grill, sauté, fry, and pantry, ensuring consistency and quality.
* Willingness to learn and train on the hearth station.
* Ensure mise en place is maintained throughout service, restocking efficiently.
* Maintain clean, organized stations, adhering to food safety standards.
* Handle and butcher proteins properly, ensuring correct portions and waste reduction.
* Assist with daily prep tasks, including knife work, sauces, and station-specific duties.
* Adapt to service needs, supporting the team across stations as necessary.
* Take pride in the food prepared for guests, following recipes, presentation standards, and guest preferences.
* Uphold and embody the company’s principles of People, Place, and Character, fostering collaboration, intuitive service, and hospitality.

You understand the art and science behind culinary responsibilities. Your skills with your knives are honed, and you have some experience in the culinary world but are eager to grow. You are committed to yourself and your team, eager to learn and utilize your skills under the guidance of our Culinary Leadership. You are comfortable with feedback and understand how each station and team member contributes to overall success.
