Salary: £25,905 - £26,111 (pro-rata for part time)
Hours: 14.25 per week, 52 weeks
Purpose of Job
The cook is responsible for the preparation, cooking and service of meals within the centre's kitchen.
Responsibilities
* Food preparation and cooking (80%).
* Storage and ongoing maintenance/monitoring of food and non-food storage areas (5%).
* Food service/counter support (10%).
* Adhere to all food safety and health and safety legislation (5%).
* Job activities: skilled cooking connected with the full range of meals (e.g. preparation of menus and cooking of meals).
* Paperwork: completion of Cook Safe paperwork (e.g. recording temperatures).
* Stock: receiving food deliveries, checking temperature and quality of food and storing and labelling food appropriately.
* Stock rotation and occasional ordering of stock.
* Control of hygiene within the kitchen: sterilising equipment, cleaning store cupboards, keeping work areas clean and tidy and maintaining a high level of hygiene and safety.
* Inform Supervisors of any staff hygiene issues within the kitchen.
* Support counter setup and presentation of the food offer and assist in the service of that food as required.
* Place orders for food and non-food as needed.
* Respond to questions from kitchen and serving staff and provide direction as appropriate to ensure service delivery. May include very occasional supervision of all kitchen staff in the temporary absence of the facilities coordinator.
* Creativity and Innovation: use cooking skills to contribute to design and feedback on core and/or special menus.
Contacts and Relationships
Daily contact with customers regarding food service, internal/external clients, colleagues as part of a team, and suppliers/delivery drivers regarding deliveries and transporting food.
Decisions
Discretion: Recommend and support the facilities coordinator in stock orders, food quality and service, and use of perishable stocks.
Consequences: Maintain menus to required quality and standard and ensure food safety procedures and legislation are followed. Shared responsibility for achieving food cost targets and safe use of equipment; report faulty equipment.
Environment
Work Demands: Working to tight timescales; may work with agency staff during shortages; coordinate with the facilities coordinator to resolve service delivery issues, as instructed by line manager.
Physical: Lifting heavy pots and pans containing hot food or liquid (approximately 20%); standing for prolonged periods.
Working conditions: Kitchen environments with possible extreme temperatures and noise from people and equipment.
Work Context: Use of hazardous equipment/cleaning materials (e.g. meat slicer, sharp knives, steamer, food mixer, sterilising sink, waste disposal).
Knowledge and Skills
* Qualifications: SQA level 1 or equivalent or relevant experience; knowledge of Cook Safe System and kitchen health and safety; ability to operate all kitchen machinery; intermediate food hygiene certificate.
* Understanding of stock and portion control.
* High level of interpersonal skills and sensitivity when dealing with a diverse customer base.
Health and Safety
The Council adheres to relevant health and safety and employment law and duty of care. All staff must work safely and report unsafe practices or conditions. If supervising, ensure safe operations and risk assessments comply with safety rules and procedures. Accident and near-miss reporting must be understood and followed.
Pre-employment and Diversity
This post is regulated work with children and/or protected adults under the Protection of Vulnerable Groups (Scotland) Act 2007. The preferred candidate will join the PVG Scheme or undergo a PVG update check. If outside the UK for more than 3 months in the last 5 years, an Overseas Criminal Record Check is required.
